Apricot delight
Ingredients/Components
- sugar - 1 c
- salt - 1/2 tsp
- water - 1 qt
- boiling water - 1 c
- dried apricots - 1/2 lb
- tapioca - 3 Tbsp
- orange gelatin - 1 pkg
How to make apricot delight:
Cook tapioca in 1 quart water until soft. Cook apricots in water until soft and put through sieve or use blender. Dissolve gelatin in hot water. Combine all ingredients and pour into mold. Chill until set. Unmold and garnish with whipped cream. Serves 6 to 8.Recipe categories: Desserts, Fruit, Weeknight.
