Festive chicken salad
Ingredients/Components
- sour cream - 1 Tbsp
- curry powder - 1/2 tsp
- mayonnaise - 2 Tbsp
- salt to taste - 1 item
- pineapple chunks - 1/4 c
- coarsely chopped walnuts - 1/4 c
- small whole chicken breast - 1 item
How to make festive chicken salad:
Cover breast with cold water in a medium saucepan and bring to a boil. Remove from heat. Cover and let stand 1 hour. Drain, skin and bone. Cut into 1/2-inch cubes. Blend mayonnaise and sour cream in medium bowl. Stir in curry powder. Mix in chicken, pineapple and walnuts. Season with salt. Chill until ready to serve.
