  • stalks celery, chopped - 2 item
  • cans tomatoes - 2 item
  • rice - 1/2 c
  • medium onions, chopped - 2 item
  • can whole kernel corn - 1 item
  • cabbage, chopped - 2 c
  • cans vegetable broth - 4 item
  • can French-cut green beans - 1 item
  • can carrots - 1 item
  • can potatoes - 1 item
  • can navy beans - 1 item
  • spices to flavor - 1 item

How to make fat-free vegetable soup:

Buy small cans of everything except broth. Broth should be 15 or 16 ounce cans. Place broth in large heavy pot and bring to a boil. Reduce heat to simmer. Add all drained canned vegetables except tomatoes. Cook slowly over low heat for 30 minutes. Add celery, onion, cabbage, rice and tomatoes and continue to cook slowly in covered pot. Flavor with seasoning (other than salt) to taste. Add water if necessary, but cook for another hour over low heat until everything is well done and flavors are well blended. Many servings. Keeps well in refrigerator.
