  • sugar - 1 tsp
  • sour cream - 3/4 c
  • salt - 1/2 tsp
  • vegetable oil - 1/4 c
  • garlic powder - 1/2 tsp
  • pepper - 1/4 tsp
  • chili powder - 1 tsp
  • shredded Cheddar or Monterey Jack cheese - 1 c
  • oregano - 1 tsp
  • picante sauce - 1 item
  • large onions, sliced - 2 item
  • large flour tortillas - 10 item
  • guacamole - 1 item
  • medium green peppers, cut in 1/4-inch strips - 2 item
  • boneless sirloin steak 1 1/2-inches thick
  • Merlot red wine - 1/4 c

How to make fajitas:

Trim fat from beef. Prick beef with fork in several places. Mix 1/4 cup oil, wine, sugar, oregano, chili powder, garlic powder, salt and pepper in ungreased square baking dish. Place beef in dish, turning once to coat both sides. Cover and refrigerate, turning beef occasionally at least 8 hours but no longer than 24 hours. Wrap tortillas in aluminum foil and heat in a 325° oven until warm, about 15 minutes. Remove from oven; keep tortillas wrapped. Remove beef from marinade; reserve marinade. Set oven control to broil or 550°.

Broil beef with top about 3 inches from heat until brown, about 8 minutes. Turn beef; brush with marinade and broil until medium done, 7 to 8 minutes longer. While beef broils, cook and stir onions and green pepper in 2 tablespoons hot oil until crisp-tender, about 10 minutes. Slice beef diagonally into very thin slices. For each serving, place some beef, onion mixture, picante sauce, cheese, guacamole and sour cream in center of tortilla. Fold one end up about 1-inch over beef mixture; fold right and left sides over the folded end. Makes 5 servings of 2 fajitas per serving.
