Ingredients/Components
- cans creamed corn - 2 item
- eggs - 2 item
- green pepper, chopped fine - 1 item
- onion, chopped fine - 1 item
- butter - 2 Tbsp
- flour - 2 Tbsp
- salt - 1 tsp
- paprika - 1/4 tsp
- mustard - 1/4 tsp
- milk - 1/2 c
- Ritz crackers, crumbled
How to make escalloped corn:
Cook green pepper and onions in butter, then add flour and seasonings to green pepper. This prevents pepper from going to the bottom of casserole. Then add corn, milk and 1 dozen crackers, then add remaining crackers on top and cook until firm. Serves about 6.Recipe categories: Side dish, Vegetables, Corn.
