Ingredients/Components

  • oil - 1/2 c
  • garlic powder - 1/2 tsp
  • dash of oregano - 1 item
  • corn tortillas - 1 item
  • ground comino - 1/2 tsp
  • chili mix - 2 pkg
  • enchilada mix - 1 pkg
  • extra lean ground meat - 2 lb

How to make enchiladas:

Cook meat. Add comino, oregano and garlic powder. Add chili mix and enchilada mix. Pour warm water over this, about 1 quart. Put oil in skillet with medium heat. Place 1 corn tortilla in oil and turn over and take out, just long enough for it to be soft, not cooked. Put on plate and repeat with 12 to 15 corn tortillas. Blot with paper towel.

In oblong cake pan, one tortilla at a time, put meat and sauce mixture (1/4 cup; use slotted spoon) into tortilla. Top with grated cheese. Roll up; place folded side down. Repeat. Pour remaining sauce over enchiladas. Cover with grated cheese. Cover with foil. Cook at 375° until bubbly.
