  • salt and pepper to taste - 1 item
  • hamburger - 1 lb
  • sharp cheese, grated - 1/2 lb
  • cans enchilada sauce - 2 oz
  • corn tortillas, cut up - 1 doz
  • 1 can pitted olives

How to make enchilada casserole:

Fry meat. Add salt, pepper and olives. Place 6 tortillas in bottom of 2-quart casserole. Add 1/2 the meat mixture to tortillas. Pour 1 can enchilada sauce over meat. Top with 1/2 the grated cheese. Repeat. Top with cheese. Cover; bake at 300° for 1 hour. Serves 6 to 8.
