Enchilada casserole
Ingredients/Components
- salt and pepper to taste - 1 item
- hamburger - 1 lb
- sharp cheese, grated - 1/2 lb
- cans enchilada sauce - 2 oz
- corn tortillas, cut up - 1 doz
- 1 can pitted olives
How to make enchilada casserole:
Fry meat. Add salt, pepper and olives. Place 6 tortillas in bottom of 2-quart casserole. Add 1/2 the meat mixture to tortillas. Pour 1 can enchilada sauce over meat. Top with 1/2 the grated cheese. Repeat. Top with cheese. Cover; bake at 300° for 1 hour. Serves 6 to 8.Recipe categories: Main dish, Casseroles, Beef.
