Eggplant dip
Ingredients/Components
- water - 1/3 c
- chili sauce - 1 c
- olive oil - 2 Tbsp
- minced garlic - 1/2 tsp
- green pepper, chopped - 1 item
- large tomato, chopped - 1 item
- medium size onion, chopped - 1 item
- medium eggplant, cubed - 1 item
How to make eggplant dip:
Using large skillet, cook eggplant, tomato, pepper and onion in butter until tender. Combine chili sauce and water. Add to the cooked vegetables. Simmer, uncovered, about 5 minutes.This may be served while it is warm or it may be chilled and served. Serve with thin cheese crackers or crackers of your choice. Makes about 3 cups.
