Eggplant casserole
Ingredients/Components
- milk - 3/4 c
- butter - 2 Tbsp
- salt and pepper - 1 item
- small onion, diced - 1 item
- shredded sharp cheese - 3 Tbsp
- crushed crackers - 1 c
- medium or large eggplant - 1 item
- slices American cheese, if desired - 4 item
How to make eggplant casserole:
Pare and slice eggplant. Cook in salted water until tender. Drain and mash. Add other ingredients except cheese slices. Place in a greased, 1-quart casserole dish. Bake at 350° for 40 minutes. Arrange cheese slices on top and bake an additional 20 minutes. Yields 4 servings.Recipe categories: Side dish, Vegetables, Casseroles.
