Eggplant casserole
Ingredients/Components
- salt - 1 item
- stick margarine - 1/3 item
- egg - 1 item
- pepper - 1 item
- mayonnaise - 1/2 c
- cracker crumbs - 3/4 c
- medium onion, chopped - 1 item
- mushroom soup - 1/2 c
- sharp Cheddar cheese - 1 c
- large eggplant - 1 item
How to make eggplant casserole:
Cook eggplant in small amount of water; drain and mash. Add salt and pepper to taste and mix with all ingredients, except margarine, cracker crumbs and cheese. Place in casserole dish. Cover with cheese and cracker crumbs. Dot with margarine. Bake at 350° for 15 to 20 minutes.Tip: Slice eggplant and sprinkle with salt. Let set for 30 minutes. Rinse and continue with this recipe. This keeps eggplant from tasting bitter.
