Ingredients/Components
- eggs, beaten - 2 item
- can water - 1 item
- celery - 1 item
- large onion - 1 item
- large bell pepper - 1 item
- can mushroom soup - 1 item
- Pepperidge Farm stuffing - 1 pkg
- small eggplant, boiled and mashed - 2 item
How to make eggplant casserole:
Brown stuffing in skillet. Add remaining ingredients and mix well. Top with cheese. Bake at 350° for 45 minutes. Serves 4 to 6.Recipe categories: Side dish, Vegetables, Casseroles.
