  • beaten eggs - 3 item
  • grated cheese
  • salt and pepper to taste - 1 item
  • medium onion, chopped - 1 item
  • stick oleo - 1 item
  • buttered bread crumbs - 1 item
  • eggplant - 1 item
  • pinch of soda - 1 item

How to make eggplant casserole:

Peel and cube eggplant. Boil in small amount of water; set to cool. Do not drain and mash with fork. Saute onion in 1 stick oleo; add cheese, eggs, salt, pepper and soda and add to eggplant. Bake in greased casserole dish in 400° oven for 20 minutes. Then add buttered bread crumbs over top and bake for another 10 minutes or until browned.
