  • milk - 2 c
  • salt - 1 tsp
  • butter
  • eggs, beaten - 2 item
  • pepper - 3/4 tsp
  • bread crumbs
  • buttered bread crumbs - 2 c
  • onion, grated - 1/4 c
  • eggplant, peeled

How to make eggplant casserole:

Cook eggplant in salted water until tender. Mash eggplant and combine with next 7 ingredients. Place in casserole and bake at 350° for 30 minutes. Cover top with bread crumbs. Bake 15 minutes longer.
