Ingredients/Components
- milk - 2 c
- salt - 1 tsp
- butter
- eggs, beaten - 2 item
- pepper - 3/4 tsp
- bread crumbs
- buttered bread crumbs - 2 c
- onion, grated - 1/4 c
- eggplant, peeled
How to make eggplant casserole:
Cook eggplant in salted water until tender. Mash eggplant and combine with next 7 ingredients. Place in casserole and bake at 350° for 30 minutes. Cover top with bread crumbs. Bake 15 minutes longer.Recipe categories: Side dish, Vegetables, Casseroles.
