Eclair ring
Ingredients/Components
- eggs - 4 item
- vanilla - 1 tsp
- milk
- flour - 1 c
- stick margarine - 1 item
- water - 1 c
- whipping cream - 1 pt
- instant vanilla pudding - 2 pkg
- container fudge frosting - 1 item
How to make eclair ring:
Preheat oven to 350°.Shell: Bring water and margarine to a full boil. Turn off burner. Add flour and beat with a spoon until a ball forms. Add eggs, one at a time, stirring by hand. Add approximately 1 teaspoon vanilla; continue stirring until soft.
Drop by spoonfuls onto a greased cookie sheet; connect together to form a ring. Bake for 1/2 hour. Turn oven off; leave in oven for an additional 15 minutes. Do not open oven door. Let cool, slice and fill.
Filling: Beat 2 packages of pudding mix, 1 1/2 cups milk, 1 pint whipping cream and vanilla to taste. Beat until thick.
Icing: Melt 1/2 container of frosting. Drip by teaspoon over top of ring.
