Ingredients/Components
- sugar - 1 c
- salt - 1/2 tsp
- vinegar
- thinly sliced onion - 2 c
- celery seed - 1/2 tsp
- mustard seed - 1/2 tsp
- ground turmeric - 1/2 tsp
- thinly sliced cucumber about 1 3/4 lb - 6 c
How to make easy refrigerator pickles:
Place half of cucumber in a large bowl. Top with half of onion. Repeat layers with remaining cucumber and onion. Combine vinegar and remaining ingredients in a medium saucepan. Stir well. Bring to a boil over medium heat; boil 1 minute. Pour hot mixture over cucumber and onion. Let cool. Cover and marinate in refrigerator at least 4 days, stirring twice each day. Yields 7 cups (37 calories and 2% fat per 1/4 cup serving).
