  • pkg - 8 oz
  • coconut - 1 c
  • cocoa - 2 Tbsp
  • stick butter - 1 item
  • powdered sugar - 3 c
  • pecans, chopped - 3/4 c
  • box German chocolate cake mix - 1 item
  • Coke - 8 Tbsp
  • Sprinkle pecans over coconut

How to make earthquake cake:

Cover the bottom of a 13 x 9-inch pan with coconut. Sprinkle pecans over coconut. Mix the cake as box directs and pour over coconut and pecans. Mix cream cheese, melted butter and powdered sugar. Mixture should be slightly thick (if more powdered sugar is needed, add gradually until you feel mixture is thick enough). Drop over cake and bake until done at 350°. Cake will crack open. Frost with Coca-Cola Icing.Coca-Cola Icing:1 stick butter2 Tbsp. cocoa8 Tbsp. Coke powdered sugar Mix butter, Coke and cocoa and cook over medium heat until it reaches a boil. Cook slowly for one minute, stirring constantly. Let cool. Add powdered sugar and beat well. Do not make too thick or frosting will be hard. This can be used on any cake and is good on the Earthquake Cake.
