Ingredients/Components
- dried apricots - 1 c
- raisins - 1 c
- orange juice - 2 Tbsp
- confectioner sugar - 1/2 c
- pitted dates - 1 c
- coconut flakes unsweetened - 1 c
- coconut flakes for garnish optional - 1 item
- ground nuts for garnish optional - 1 item
How to make dried fruit balls:
In a chopping bowl or food processor, finely chop the apricots, dates, raisins and coconut. Stir in the sugar and juice, mixing the ingredients thoroughly. Snip off enough mixture to shape into 1-inch balls (first dusting hands with powdered sugar). Roll the fruit balls in the coconut or nuts. Place the fruit balls in layers in a container, separating the layer with wax paper and tightly cover the container.Preparation tips: A food processor makes preparation a snap. The fruit balls can be prepared way in advance and frozen in layers, separated by wax paper. For freezer storage, seal the fruit balls in plastic or place them in a tightly covered container.
