Ingredients/Components
- sugar - 1 c
- eggs - 3 item
- chopped pecans - 1 c
- salt - 1/2 tsp
- flour - 4 c
- brown sugar - 2 c
- water - 1 c
- baking soda - 1 tsp
- shortening - 1 c
- lemon juice - 1 Tbsp
- chopped, pitted dates
How to make date pinwheels:
Filling:2 1/4 c. chopped, pitted dates1 c. sugar1 c. water1 Tbsp. lemon juice1 c. chopped pecans Combine dates, sugar, water and lemon juice in saucepan. Cook over medium heat until thickened. Stir in pecans. Cool. Cream together shortening and sugar. Add eggs and beat well. Sift together dry ingredients and stir in. Chill dough. Divide dough into fourths and roll out one part at a time 1/4-inch thick on waxed paper. Spread with 1/4-inch of filling. Roll up jelly roll fashion. Repeat. Freeze rolls until firm. Slice 3/8-inch thick and place on greased cookie sheet. Bake 8 to 10 minutes at 375°.Recipe categories: Desserts, Cookie and brownie, Hand Formed cookies.
