Ingredients/Components
- sugar - 1/2 c
- eggs - 2 item
- vanilla - 1 tsp
- milk - 2/3 c
- salt - 1 tsp
- flour - 4 c
- brown sugar - 1/2 c
- water - 1/2 c
- baking soda - 2 tsp
- shortening - 1 c
- cream of tartar - 4 tsp
- white sugar - 1 c
- cut up dates - 1 lb
How to make date filled cookies:
Cream together first 4 ingredients; add milk. Sift together flour, tartar, soda and salt. Add flour mixture to sugar mixture and add vanilla. Roll out on a floured board to 1/4-inch thickness. Cut with a very small cookie cutter 2-inches. Place a teaspoonful of date filling on each cookie and cover with a second cookie; press edges together. With a fork, punch holes in top of cookie. Bake at 375° until light brown, about 12 minutes.Filling: Mix dates, sugar and water and cook until soft and thickened; add vanilla.
