Date pinwheel cookies

Ingredients/Components

• sugar - 1 c
• vanilla - 1 tsp
• salt - 1/2 tsp
• chopped nuts - 1/2 c
• flour - 4 c
• water - 1/2 c
• soda - 1 tsp
• eggs, beaten - 3 item
• butter/margarine/shortening - 3/4 c
• chopped dates date nuggets okay - 1 lb

How to make date pinwheel cookies:

Filling:1/2 c. sugar1/2 c. water1 lb. chopped dates (date nuggets okay)1/2 c. chopped nuts Cream the shortening. Add sugar and cream until fluffy. Add eggs which have been beaten. Add vanilla and salt. Add dry ingredients. Chill. Pour boiling water over dates. Allow to stand until dates are soft. Add sugar and cook until thick. Add finely chopped nuts. Cool. Roll cookie dough thin. Spread filling. Roll up. Chill. Slice thin. Bake on floured sheets. Preheat oven to 375°. Bake 8 minutes. Cool on waxed paper. Store in Ziploc bags or boxes/tins.
