Date pinwheel cookies

Ingredients/Components

• sugar - 1 c
• salt - 1/2 tsp
• chopped nuts - 1 c
• brown sugar - 2 c
• water - 1 c
• soda - 1/2 tsp
• chopped dates
• shortening - 1 c
• sifted flour - 4 c
• eggs, well beaten - 3 item

How to make date pinwheel cookies:

Filling: Cook the chopped dates, sugar and water to a boil. Cool. Add chopped nuts.

Make a dough. Cream shortening and brown sugar. Add well beaten eggs, flour, salt and soda. Roll out dough, then cover with filling. Roll like a jelly roll. (It makes several rolls.) Refrigerate overnight. Slice in 1/4-inch slices. Bake at 350° for 12 minutes.
