Curried chicken and artichoke salad
Ingredients/Components
- pkg - 1 oz
- curry powder - 1 tsp
- 2 oz
- salt and pepper to taste - 1 item
- mayonnaise - 1 c
- sliced green olives - 1/4 c
- bell pepper, chopped - 1 item
- scallions, sliced - 4 item
- chicken breast halves, cooked and cubed - 6 item
- jars marinated artichokes, drained marinade reserved - 2 oz
How to make curried chicken and artichoke salad:
Cook both rice mixtures according to directions. Cool. In a large bowl, combine rice, chicken, bell pepper, olives, scallions and drained artichokes. In a separate bowl, mix together marinade, mayonnaise, curry, salt and pepper. Stir mixture into chicken salad. Refrigerate. Serves 10 to 12.Recipe categories: < 15 mins, Salads, 3 steps or less.
