Ingredients/Components

  • salt - 2 tsp
  • butter - 2 Tbsp
  • water
  • clove garlic - 1 item
  • tomatoes, chopped - 4 item
  • onions, chopped - 2 item
  • cooked shrimp - 2 c
  • rice
  • beef stock - 2 c
  • green peppers, chopped - 2 item
  • uncooked or cooked ham, cut into small pieces - 1/2 lb
  • sliced, cooked, spicy sausage - 1/2 lb
  • cooked chicken, cut julienne - 1 c

How to make creole jambalaya:

Wash rice carefully and place in a large saucepan with water and salt. Cover and cook over low heat until boiling point is reached. Cook 5 minutes longer. Drain and rinse with cold water. Drain once more.

In a separate saucepan, melt butter and add the ham, garlic, sausage, onions and green peppers. Cook over medium heat for 10 minutes, stirring frequently. Reduce to low heat and add the tomatoes and beef stock. Add the sliced chicken and shrimp.

If the jambalaya is intended for a fast day, leave out chicken, sausage and ham. Use the shrimp, but increase quantity of shrimp to 3 cups instead of 2.
