- slices bacon - 4 item
- onion, chopped - 1 c
- bell pepper, chopped - 1 c
- celery, chopped - 1 c
- can tomatoes, chopped - 1 1/2
- can black-eyed peas - 1 oz
- sugar - 2 3
- bay leaf - 1 item
How to make creole black-eyed peas:
Cook bacon in a large skillet until crisp; remove bacon, reserving drippings in skillet. Crumble bacon and set aside. Saute onion, bell pepper and celery in drippings until tender.
