Creole black-eyed peas
Ingredients/Components
- sugar - 2 3
- pkg - 2 oz
- bay leaf - 1 item
- onion, chopped - 1 c
- salt to taste - 1 item
- green pepper, chopped - 1 c
- celery, chopped - 1 c
- slices bacon - 4 item
- can Ro-Tel - 1 oz
How to make creole black-eyed peas:
Cook bacon in large skillet until crisp. Remove bacon, reserving drippings in skillet. Crumble bacon and set aside. Saute onion, green pepper and celery in drippings until tender. Stir in Ro-Tel, peas, sugar, salt to taste, bay leaf and half the crumbled bacon. Cook over low heat 30 to 45 minutes. Add water if necessary. Remove bay leaf and sprinkle with remaining crumbled bacon just before serving. Makes 6 to 8 servings.Recipe categories: Side dish, Beans, Chickpeas/garbanzos.
