Ingredients/Components

  • flour - 1/2 c
  • salt and pepper to taste - 1 item
  • stick oleo - 1/2 item
  • large onion - 1 item
  • to 8 medium potatoes - 6 item
  • large carrot - 1 item
  • milk, scalded
  • parsley if desired - 1 item
  • green pepper medium - 1 item
  • red pepper small for color - 1 item

How to make creamed potato soup:

Cream Sauce:2 c. milk, scalded1/2 c. flour1/2 stick oleo Peel and slice vegetables into cooking pot. Cover with water and simmer until tender. Do not drain. Let cool a few minutes, then puree in electric blender or put through a colander or sieve. Return to cooking pot.

Make the cream sauce: Melt oleo. Stir in flour; add scalded milk. Cook 3 to 5 minutes. Add to vegetable puree. Stir well. Season to taste. Serve hot. Serves 6 to 8.
