Cranberry-orange nut bread
Ingredients/Components
- milk - 1/2 c
- salt - 3/4 tsp
- chopped nuts - 1/2 c
- baking powder - 2 tsp
- baking soda - 1/2 tsp
- all-purpose flour
- egg, well beaten - 1 item
- plus 2 Tbsp - 3/4 c
- orange juice - 1/2 c
- shortening, melted - 2 Tbsp
- coarsely chopped cranberries - 1 c
How to make cranberry-orange nut bread:
Mix flour with sugar, baking powder, salt and soda. Add cranberries and nuts. Combine egg, milk and orange juice. Add to flour mixture with melted shortening; mix until all flour is dampened. Pour into greased 9 x 5-inch loaf pan. Bake at 350° for 1 hour, or until cake tester inserted in center comes out clean. Cool in pan 10 minutes, then remove from pan and finish cooling on rack.For easier slicing and mellowing of flavors, store bread overnight wrapped in wax paper, plastic wrap or aluminum foil.
