Cranberry muffins
Ingredients/Components
- sugar - 1 C
- butter or margarine - 1/4 C
- salt - 1 tsp
- flour - 2 C
- baking powder
- baking soda - 1/2 tsp
- nuts, chopped - 1/2 C
- egg, well beaten - 1 item
- grated orange peel - 1 tsp
- orange juice - 3/4 C
- cranberries
How to make cranberry muffins:
Sift flour, sugar, baking powder, salt and baking soda together in a large bowl. Cut in butter until mixtures is crumbly. Add egg, orange peel and orange juice all at once. Stir until mixture is evenly moist. Fold in cranberries and nuts. Spoon batter into prepared muffin cups, 2/3 full.Bake at 350 degrees for about 25 - 30 minutes or until golden brown.
Makes about 15 muffins.
