Cranberry meatballs
Ingredients/Components
- salt - 2 tsp
- pepper - 1/4 tsp
- mustard - 1 tsp
- ground beef - 1 lb
- medium onion, finely chopped - 1 item
- eggs, slightly beaten - 2 item
- sausage - 1 lb
- whole cranberry sauce - 2 cans
- cans tomato soup undiluted - 2 3/4
- about 15 saltine crackers - 1 c
How to make cranberry meatballs:
Combine first 7 ingredients.* For appetizers, shape into 1-inch meatballs (about 5 dozen). Place on rack in a 15 x 10 x 1 baking pan at 400° for 15 minutes.Meanwhile, combine cranberry sauce, soup and mustard in large saucepan. Bring to a boil. Reduce heat and add the meatballs. Simmer uncovered for 10 minutes.
*For main dish entree, make into 18 meatballs and bake at 350° for 20 to 25 minutes, then add to sauce.
