How to make country fried steak:

Divide steak into serving pieces. Pound with a kitchen mallet or rim of saucer until thin. Sprinkle with salt and pepper. Dust with flour. In a skillet, heat oil and sear meat until evenly browned on all sides. Add onion and cook several minutes until limp. Combine chicken stock and buttermilk and pour over meat. Stir to loosen up crust from the bottom of the skillet. Cover and cook over medium-low heat until meat is tender, 45 to 50 minutes. Add cheese and stir into gravy. This is delicious over rice or biscuits. Makes 6 to 8 servings.
