Corned beef casserole
Ingredients/Components
- salt - 1/2 tsp
- dry mustard - 1/2 tsp
- pepper - 1/2 tsp
- shredded sharp Cheddar cheese - 1/2 c
- fine dry bread crumbs - 1/2 c
- finely chopped onion - 3/4 c
- cloves garlic, crushed - 2 item
- finely chopped green pepper - 1 c
- peanut or vegetable oil - 5 Tbsp
- chopped cooked corned beef - 2 c
- yogurt or sour cream - 1/2 c
- chopped cooked potatoes - 2 c
How to make corned beef casserole:
Heat 4 tablespoons oil in large skillet over high heat. Add potatoes, green pepper, onion and garlic. Quickly cook until potatoes are lightly brown, turning mixture frequently. Remove from heat. Stir in corned beef, mustard, salt, pepper and yogurt. PRecipe categories: Main dish, Casseroles, Beef.
