Ingredients/Components

  • salt - 1 tsp
  • water - 2 c
  • chopped onion - 1/2 c
  • parsley flakes - 1/2 tsp
  • bay leaf - 1 item
  • diced celery - 1 c
  • celery salt - 1/2 tsp
  • creamed corn - 2 c
  • whole kernel corn - 2 c
  • peeled, cubed potatoes - 2 c
  • rich soy or tofu milk - 2 3

How to make corn chowder:

Place all ingredients, except the last three, in a large kettle and simmer over low heat until potatoes are almost done. Stir in corn and continue simmering for 10 minutes, stirring frequently. Add milk to desired consistency. Turn heat off and let stand for 15 to 20 minutes. Remove bay leaf before serving.
