Corn chowder
Ingredients/Components
- , peeled and diced 2 1/2 c - 3 medium-size
- water - 1 c
- chopped onion - 1/2 c
- can kernel corn, drained - 1 oz
- can creamed corn - 1 3/4
- can evaporated milk - 1 oz
- butter or margarine - 1 Tbsp
- each salt and pepper - 1/2 tsp
- chili powder for garnish - 1 item
How to make corn chowder:
(Leftover ham or cooked seafood can be added for an even heartier meal.)Bring potatoes, water and onion to boil in a large saucepan over medium-high heat. Reduce heat, cover and simmer 8 to 10 minutes, stirring once or twice, until potatoes are tender. Stir in remaining ingredients. Simmer, uncovered, 3 to 5 minutes for flavor to develop. Makes 4 servings.
