Confetti rice
Ingredients/Components
- butter - 1/4 c
- grated carrots - 2 Tbsp
- sliced green onions - 2 Tbsp
- parsley flakes - 1 Tbsp
- thinly sliced celery - 2 Tbsp
- uncooked rice - 3/4 c
- hot chicken broth
- sliced toasted almonds optional - 1 Tbsp
How to make confetti rice:
Melt butter in a skillet. Add rice, toss to coat with butter. Heat on low for 5 minutes, stirring occasionally. Place rice mixture in a 2-quart casserole bowl; add hot chicken broth. Cover and bake at 350° for 30 minutes. Stir in the remaining ingredients. Cook 5 additional minutes. Serves 4.Recipe categories: Side dish, Pork, Bacon.
