Ingredients/Components

  • firmly packed brown sugar - 1/2 c
  • chopped walnuts or pecans - 1/2 c
  • all-purpose flour - 2 Tbsp
  • ground cinnamon - 2 Tbsp
  • melted butter or margarine - 2 Tbsp
  • sugar - 1/2 c
  • salt - 1/2 tsp
  • egg, beaten - 1 item
  • baking powder - 2 tsp
  • shortening - 1/4 c
  • milk - 1/2 c

How to make coffee cake muffins:

Combine brown sugar, walnuts, 2 tablespoons flour, cinnamon and butter. Set aside. Sift dry ingredients into bowl. Cut in shortening until it resembles coarse crumbs. Combine egg and milk; add to flour mixture and stir just until moistened.

Grease muffin pans. Spoon in a small amount of batter and top with a layer of nut mixture. Repeat layers, filling each cup 2/3 full. Bake at 375° for 20 minutes or until done. Yields 1 dozen.
