Coffee cake muffins
Ingredients/Components
- firmly packed brown sugar - 1/2 c
- chopped walnuts or pecans - 1/2 c
- all-purpose flour - 2 Tbsp
- ground cinnamon - 2 Tbsp
- melted butter or margarine - 2 Tbsp
- sugar - 1/2 c
- salt - 1/2 tsp
- egg, beaten - 1 item
- baking powder - 2 tsp
- shortening - 1/4 c
- milk - 1/2 c
How to make coffee cake muffins:
Combine brown sugar, walnuts, 2 tablespoons flour, cinnamon and butter. Set aside. Sift dry ingredients into bowl. Cut in shortening until it resembles coarse crumbs. Combine egg and milk; add to flour mixture and stir just until moistened.Grease muffin pans. Spoon in a small amount of batter and top with a layer of nut mixture. Repeat layers, filling each cup 2/3 full. Bake at 375° for 20 minutes or until done. Yields 1 dozen.
