- sugar - 1/2 c
- vanilla - 1 tsp
- milk
- salt - 1/8 tsp
- cornstarch - 1/3 c
- eggs, separated - 2 item
- coconut - 1 c
- margarine - 2 Tbsp
- baked pie shell - 1 item
How to make coconut pie:
Mix sugar, salt and cornstarch in saucepan with 1/3 cup milk. Beat egg yolks; add to remaining milk. Stir well. Add egg mixture to saucepan. Cook over medium heat, stirring constantly, until thick. Remove from heat. Stir in vanilla, margarine and coconut. Pour into baked pie shell. Beat egg whites, adding 1/4 cup sugar and cover pie.
