Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- vanilla - 1/2 tsp
- flour - 6 Tbsp
- butter - 2 Tbsp
- pinch of salt - 1 item
- boiling water - 1 c
- sweet milk - 1 c
- box dry coconut - 1 item
How to make coconut pie:
Mix sugar and flour together dry. Add salt. Mix boiling water and then add milk. Separate eggs. Add yolks to milk and sugar. Cook in a double boiler until it begins to thicken. Add butter, coconut and vanilla. Stir constantly until thick enough for pie. Pour into cooked crust. Make meringue of whites, using 2 tablespoons sugar.
