  • sugar - 2 c
  • eggs - 4 item
  • vanilla - 1 Tbsp
  • milk - 1 c
  • water - 2 c
  • cold water - 5 Tbsp
  • self-rising flour - 3 c
  • cream of tartar - 1/2 tsp
  • butter or Crisco - 1/2 lb
  • Karo syrup - 1/3 c
  • almond flavoring - 1 Tbsp
  • block butter - 1 item
  • Add flour, milk and vanilla
  • or 2 coconuts ground fine - 6 pkg
  • Spread out on tray to cool

How to make coconut cake:

Beat the eggs and sugar. Add flour, milk and vanilla. Bake at 350° for 35 minutes. Makes 3 layers.Coconut Filling:2 1/2 c. sugar2 c. water6 pkg. or 2 coconuts (ground fine)1 block butter1/3 c. Karo syrup Let cook on low fire about 30 minutes. Spread out on tray to cool. Place between layers.Seven Minute Frosting:2 egg whites1 1/3 c. sugar2 Tbsp. Karo syrup5 Tbsp. cold water1/2 tsp. cream of tartar1 Tbsp. almond flavoring Place unbeaten egg whites, sugar, syrup and water in double boiler. Whip with beater until stiff (7 minutes). Remove from fire and add almond. Spread on cake top with coconut.
