Ingredients/Components

  • sugar - 2 c
  • eggs - 4 item
  • salt - 1/2 tsp
  • flour - 3 c
  • butter - 3 Tbsp
  • water - 3/4 c
  • coconut - 1 c
  • oil - 1 c
  • buttermilk - 1 c
  • baking powder - 1/2 tsp
  • baking soda - 1/2 tsp
  • nuts, chopped - 1 c
  • coconut flavoring - 2 tsp

How to make coconut bread:

Glaze:1 tsp. coconut flavoring3 Tbsp. butter3/4 c. water1 1/2 c. sugar Blend eggs, 2 cups sugar, oil and 2 teaspoons flavoring. Blend dry ingredients. Alternate flour and milk into egg mixture. Add nuts and coconut. Bake at 325° for 1 hour. Makes 2 loaves.

Glaze: Simmer glaze in pan for 5 minutes. Pour 1/2 of glaze on hot cakes. Save remaining 1/2 of glaze for the next time you make cake.
