Ingredients/Components
- sugar - 1 c
- flour - 1 Tbsp
- vinegar - 1 qt
- dry mustard - 5 Tbsp
- celery seed - 2 tsp
- small cucumbers - 1 qt
- green peppers - 3 item
- turmeric - 1 Tbsp
- red peppers - 3 item
- medium green tomatoes - 4 item
- small white onions - 1 qt
- heads cauliflower - 2 item
How to make chow chow:
Peel onions and cucumbers. If cucumbers are large, remove the seeds. Slice tomatoes thin. Chop onions, cucumbers and peppers small. Cut cauliflower into small pieces. Soak vegetables overnight in brine made of 1 cup salt to 1 quart water. Stir and mix well. Next day, drain well.In a large pot, add vinegar and celery seed. Turn heat on. Make a paste with mustard, flour, sugar, turmeric and a little cold vinegar. Add the paste to the vinegar and celery seed. Stir until mixture thickens. Add vegetables. Bring to a boil and let simmer for 20 minutes, stirring often. Place boiling hot into hot sterilized jars. Leave 1/8-inch headspace. Seal.
