Corn relish
Ingredients/Components
- sugar - 2 c
- salt - 1 to
- flour - 1/4 c
- vinegar - 3 pt
- dry mustard - 1 Tbsp
- celery seed - 1 Tbsp
- red pepper - 1 item
- green peppers - 2 item
- turmeric - 1 tsp
- large onions - 3 item
- large cabbage - 1 item
- large ears corn, uncooked - 12 item
How to make corn relish:
Cut corn from cob. Grind cabbage. Chop onions and peppers. Mix raw vegetables and salt. Add half of vinegar and bring to a boil. Mix sugar, seasonings and flour together. Add remaining vinegar. Stir until smooth. Cook until thickened. Add to vegetables and cook for 30 minutes or until tender. Pour into hot sterilized jars and seal.
