Chocolate zucchini cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla - 2 tsp
- milk - 1/2 c
- salt - 1 tsp
- flour
- soda
- baking powder
- softened butter - 3/4 c
- grated orange peel - 2 tsp
- shredded zucchini - 2 c
- chopped walnuts or pecans - 1 c
- baking cocoa - 1/2 c
How to make chocolate zucchini cake:
Combine the flour, cocoa, baking powder, soda, salt and cinnamon. Set aside. Beat together butter and sugar until smooth. Add eggs, one at a time, beating after each addition. Stir in vanilla, orange peel and zucchini. Alternately stir in dry ingredients and milk to zucchini mixture. Stir in nuts. Pour into a greased and floured Bundt pan. Bake for about 1 hour at 350°. Glaze with 2 cups powdered sugar, 3 tablespoons milk and 1 teaspoon vanilla.Recipe categories: Desserts, Chocolate, Cakes.
