Chocolate zucchini bread
Ingredients/Components
- vanilla - 1 tsp
- salt - 1/2 tsp
- brown sugar - 1/2 c
- baking powder
- margarine - 1/3 c
- white sugar - 1/2 c
- egg, beaten - 1 item
- flour plain - 1 c
- plus 1 tsp - 4 Tbsp
- nut meats - 2/3 c
- unpeeled shredded zucchini - 1 c
How to make chocolate zucchini bread:
In a mixing bowl, cream 1/3 cup margarine with the cocoa and both sugars. Blend in beaten egg, flour, baking powder, salt and vanilla. Stir in zucchini and nuts. Blend thoroughly. Bake in 350° oven in 8 x 8-inch pan for 15 minutes or until top crust is dry and edges pull away from sides of pan. Interior will be moist.
