  • semi-sweet chocolate
  • eggs, separated - 4 item
  • powdered sugar - 6 Tbsp
  • stick butter, melted - 1 item
  • whipping cream - 4 c
  • whole eggs - 2 item
  • cornstarch or arrowroot - 1 tsp
  • crushed chocolate wafers - 3 c

How to make chocolate mousse cake:

Filling:1 lb. semi-sweet chocolate2 whole eggs4 eggs, separated4 c. whipping cream6 Tbsp. powdered sugar1 tsp. cornstarch or arrowroot Combine crumbs and butter; press into 9 to 10-inch spring-form pan, covering sides and bottom. Refrigerate.

Soften chocolate over hot water or in microwave. Let cool to lukewarm. Then add whole eggs and mix well. Add the 4 egg yolks and mix until blended. Whip 2 cups of the cream with powdered sugar until soft peaks form. Beat 4 egg whites until stiff. Stir some whipped cream and egg whites into chocolate mixture, then fold in remaining cream and whites until completely mixed. Pour into crust and chill overnight. Whip remaining 2 cups cream until stiff, adding cornstarch to stabilize. Remove side from pan. Place cake on platter. Spread the stiff cream over top and sides of cake.
