  • pkg - 1 oz
  • can cream of chicken soup - 1 item
  • can chicken broth - 1 item
  • small diced onion - 1 item
  • small green or red pepper, diced - 1 item

How to make chicken tetrazzini:

Debone and dice chicken. Save stock and cook fettucine (following directions on package). Drain cooked fettuccine and pour cold water over the fettucine so that the spaghetti will not get any softer. Drain fettucine and and pour into a buttered 13 x 9-inch dish.

Mix in a large pan the chicken soup, broth and add cheese. Saute onion and bell pepper in butter and add to mixture. Cook until cheese has almost melted. Pour diced chicken into mixture. Pour this mixture over the fettucine and stir well.

If you would like to add bread crumbs on top of the casserole, do so now. This is optional. Bake in a 350° oven for 30 minutes. Serve with French bread and salad. This casserole can be frozen.
