Ingredients/Components

  • milk - 1 c
  • sliced fresh mushrooms - 1 c
  • medium onion, diced - 1 item
  • can cream of mushroom soup - 1 item
  • fresh parsley - 3 4
  • small jar pimentos - 1 item
  • sharp Cheddar cheese - 1 pkg
  • cooking sherry or wine - 1/2 3/4
  • box linguini - 1/2 item
  • to 6 cooked chicken breasts, chopped into chunks or pieces - 4 item
  • stick butter a little more, depending on onion size - 1 item

How to make chicken tetrazzini:

In a separate pan, cook linguini, accordingly and drain.

In a Dutch oven, melt butter and then saute the diced onion until transparent along with the mushrooms. Over medium heat, add soup and milk until blended and hot. Add cheese, chopped into chunks or slices so that it melts better. When blended smoothly (and it should be a nice golden color), add the cooked chicken pieces, fresh parsley and pimentos and mix together; add sherry. It should be easy to mix, but thick. Salt and pepper to taste. This is a one dish meal, so when adding linguini, mix thoroughly. Serves 4.
