Chicken taco salad
Ingredients/Components
- oil - 1 Tbsp
- salsa - 1/2 c
- shredded lettuce - 3 c
- chopped tomato - 1/2 c
- shredded Cheddar cheese - 1 item
- Miracle Whip salad dressing - 1/2 c
- hot pepper sauce - 1/4 1/2
- tortilla chips - 3 c
- can kidney beans, drained and rinsed - 1 oz
- ripe avocado, peeled and mashed - 1 item
- chicken breast halves, boned, skinned and cubed - 2 item
How to make chicken taco salad:
Stir-fry chicken in oil over medium-high heat for 4 to 5 minutes or until tender. Reduce heat to medium. Stir in salsa; cover 5 minutes. Stir together salad dressing, avocado and hot pepper sauce. To serve, layer chips, lettuce, beans, chicken, tomatoes and avocado mixture on serving plate. Top with cheese. Makes 4 servings.
