Ingredients/Components
- chicken thighs - 1 pkg
- carrots, peeled and diced - 3 c
- to 5 chicken bouillon cubes - 4 item
- +/- potatoes, peeled and diced - 10 item
How to make chicken soup:
Boil chicken in 1 gallon water until tender (approximately 1 hour). Skin and debone; discard water. Then in 3 quarts fresh water, simmer chicken, bouillon, carrots and potatoes. Will be fork-tender in about 30 minutes. Salt and pepper to taste.Dumplings: Knead together 2 cups flour and 3 eggs. Add approximately 2 teaspoons water, if needed. Toss teaspoonfuls into chicken broth as it is simmering. Serve in a few minutes.
