  • pkg - 1 1/2
  • milk - 1 c
  • butter or margarine - 1/4 c
  • flour - 3 Tbsp
  • butter or margarine, melted - 1/4 c
  • grated Parmesan cheese - 2 Tbsp
  • 4 oz - 1 c
  • sliced mushrooms - 1 c
  • green onions, chopped - 3 item
  • dry parsley flakes - 1 Tbsp
  • whole chicken breasts, split, skinned and boned - 3 item
  • dry Italian-style bread crumbs - 1/3 c

How to make chicken roll-ups:

Place each chicken breast on a sheet of waxed paper; flatten using a meat mallet on rolling pin. Place 3 to 4 strips of ham across each chicken breast. Sprinkle Swiss cheese evenly over each chicken breast. Fold long sides of chicken towards the center; fold in sides of chicken to center, and secure with wooden picks.

Combine bread crumbs, Parmesan cheese and parsley flakes. Roll each breast in melted butter and coat with bread crumb mixture. Place mushrooms, onions and butter in a deep baking dish. Heat. Stir in flour, gradually stirring in milk. Add chicken breasts and spoon sauce over breasts. Cover and bake at 350° for 30 to 45 minutes.
