Chicken pizzaiola
Ingredients/Components
- mushrooms, sliced - 3/4 c
- olive oil - 2 Tbsp
- fresh basil - 1/4 1/2
- cherry tomatoes - 2 qt
- cloves garlic, cut in half - 2 item
- to 3 boneless chicken breasts, cut into 1-inch cubes - 2 item
How to make chicken pizzaiola:
In deep skillet or wok, heat oil on medium-high heat. Add garlic, tomatoes and basil. Saute until tomatoes are soft (5 to 7 minutes). Mash with potato masher. Add chicken and mushrooms. Reduce heat to simmer (medium-low to low). Allow to simmer until chicken is cooked through, about 10 to 15 minutes. Serve over rice or angel hair pasta.
